LEMON RICE

Lemon rice is a basic simple recipe. It takes place in our lunch menu twice or thrice a month.. It needs only 5 minutes to do  if u have cooked rice in ur hand... 

Adding peanuts gives excellent crunchiness to this rice. I saw some people avoid turmeric powder in this recipe , i recommend not to avoid turmeric powder,coz it gives nice appetizing color to rice.

INGREDIENTS :

  1. Cooked rice - 1 cup
  2. Lemon juice - 2 tbl spn / according to ur taste
  3. Sesame oil- 1 tbl spn
  4. Mustard seeds - 1/2 tsp
  5. Urad dal - 1 tsp
  6. Channa dal - 1tsp
  7. Peanuts - 2 tsp
  8. Hing - a pinch
  9. Dry red chilli - 2 pc
  10. Curry leaves - 1 spring
  11. Turmeric powder - 3/4 tsp
  12. Salt - to taste

RECIPE :

Take all the ingredients
Cook the rice and keep aside
Heat oil in a pan
Add mustard seeds , urad dal
Let it splutter
Add channa dal
Add peanuts
Fry it , add red chillies
Add curry leaves ,hing & turmeric powder
Finally add lemon juice & switch off the flame
Add this mixture immediately to cooked rice
Add salt & stir gently
Serve it with pickle , pappad , potato fry , egg ....
