EASY MUSHROOM BIRIYANI

 Mushroom biriyani is very simple to make , but it taste more delicious.. It needs handful of ingredients.  Mushroom is a healthy option ..

 INGREDIENTS :

  1. Mushroom- 200 gms
  2. Basmati rice - 1 cup 
  3. Onion - 1 large
    Tomato - 1 small
  4. Green chilly - 3 pcs
  5. Coriander leaves- 1/2 cup
  6. Mint leaves - 1/4 cup
  7. Ginger - 1 inch 
  8. Garlic - 3 big pods / 4-5 small 
  9. Lemon - 1/2 pc
  10. Ghee - 3/4 spoon
  11. Oil- 2 spoons
  12. Cashew nuts - 5 pcs
  13. Dry grapes - 5 - 7 pcs
  14. Turmeric powder - 1/4 tsp
  15. Chilli powder  - 1/2 spoon
  16. Biriyani powder - 1 spoon
  17. Curd/ yogurt - 2 spoon
  18.  Coconut milk- 1 cup
  19. Whole spices: cinnamon (pattai) - 1 inch
  20. Bay leaf - 1
  21. Cloves - 3 pcs
  22. cardamom - 2 pcs
  23. Black stone flower - 1 pc
  24. Star anise- 1 pc 

 RECIPE :

Take all the ingredients
Wash & soak the rice for 30 mins
Chop onion , tomato  &mushroom
Slit green chillies
Peel ginger & garlic pods 
Wash and chop coriander & mint leaves
Crush ginger & garlic finely
Heat a pressure cooker 
Add ghee & oil
Add whole spices one by one
Add cashew & dry grapes
Saute it
Add crushed ginger & garlic
 Saute for 1 min
Now add sliced onions & green chilly
 Saute till onion turns translucent
Add chopped tomato
Saute well
Now add chopped leaves ( coriander & mint )
Saute.... saute...
Add all the spice powders, saute
Now add curd
Saute till oil oozes out

Add chopped mushrooms & saute

Add soaked rice 


Now add coconut milk
Add enough water

Squeeze lemon juice and add
Give a stir
Close the lid & cook in a medium flame for 2 whistles  / cook for 15 mins in medium heat
Let it cool for 20 mins
Fluff up the rice with fork

Serve hot with onion raita / plain curd
